Start the pump, open the valves

 

 

 

 

 

And after running in enough water to cover the wedge wire plates, introduce the malt.

 

 

 

 

The mash is evenly mixed as it enters the mash tun

 

 

 

 

and slowly empties the grist case

 

 

 

 

 

Then, relax for an hour while the enzymes do their bit in breaking down the sugars.

 

 

 

 

The first wort is run off

 

 

 

 

 

and sparging begins

 

 

 

 

 

The trick at this stage is to carefully balance the pumps so that sparge water into the mash tun from the HLT is equal to the drain off to the underback and the pump rate to the copper.
